This is one kitchen item that doesn't get used that often, but really comes in handy when I need it. I've never made tortillas, but I have used this quite often to keep pancakes, waffles, and french toast warm -- basically anything you cook in batches. It works best to leave the lid a little offset to allow some steam out until you're ready to serve, or the pancakes or whatever on the bottom can get a bit soggy. This item was used to keep tortillas hot at buffet dinner for approximately 75 people.The tortillas were heated on a griddle and then stored in this warmer.They stayed warm throughout the serving of the meal (about 40 minutes).The warmer did exactly what it was purchased for.
