The empty pan is ballanced nearly evenly between handle and pan, although the empty pan will sit level on the stove top. With any amount of food in it, the pan becomes an ergonomic pleasure. I just received my order.I was disappointed in the balance of the pan. When set empty on a flat counter, the weight of the handle causes it to tilt up and wobble.It takes over a cup of water to finally get it to stop teetering and to sit level and more to make it stable when stirring and not holding on to the handle. When making a white sauce and melting the butter first, you are required to stay with the pan and hold the handle until you can add enough ingredients to get it to stop teetering dangerously ... I have been making sauces for more years than I care to admit and have always had trouble with the roux hiding in places my whisk or spoon can't reach.Not a pleasing result!With this saucier, with its rounded sides and bottom...no more lumps and the smoothest sauce you can imagine.Double added bonus is the fact that it is the most beautiful pan I have ever seen and is a fine decoration hanging on the wall!I can't say enough!
