I lived in the Pacific Northwest for the past 8 years, and I was always looking for new ways to prepare salmon.Poached salmon with a Hollandaise sauce is WONDERFUL (& easy!). Here's my recommendation for poaching liquid: 2 Quarts water 3 cups dry white wine 2/3 cup fresh lemon juice 2 small onions, quartered 3 carrots, chopped 3 sprigs fresh parsley 1 tsp. dried thyme 1 bay leaf 2 tsp. salt 1 1/2 tsp. black peppercorns, cracked
Combine all ingredients in the poacher & bring to a boil with salmon (whole or pieces) in place. Reduce heat to a very low simmer for about 1 hour.Lift fish & serve with Hollandaise sauce. Enjoy!
